A wonderful Australian take on traditional pasta sauce and will be one of your great ideas for dinner

INGREDIENTS

1 tbspn Natural Macadamia Oil

1 each of an onion, stick of celery and carrot (diced)

1 tsp Bush Tomato , ground

1 tspn Saltbush

1 tspn Pepperberry, ground

2 tins Tomato Frito

500g minced meat OR firm fish of your choice (optional) **

1 packet Casarecce Pasta

Parmesan or Pecorino to serve

How To Create…

In a frying pan, heat the Macadamia Oil.

Add the diced onion, celery and carrot and sauté until just beginning to soften.

Add the ground Bush Tomato, Saltbush and Pepperberry (don’t forget to taste!) and combine.

Add the Tomato Frito, combine & simmer for approximately 30 minutes.

Cook your pasta.

Serve sauce with pasta garnished with a lovely hard cheese such as parmesan or pecorino

** If adding minced meat, brown the meat in a separate pan and add to the sauce during the simmer process. If adding fish, cut into cubes and poach in sauce in last 8 minutes of simmer process.
