Ingredients

How to Create:

  1. Preheat oven 400ºF/200ºC
  2. In a small bowl mix together the lemon zest sea salt rub, salt bush and mountain pepper sea salt rub and ¼ cup of oil (choice from above)
  3. Place the chicken in a roasting dish breast side down.
  4. Spoon a â…“ of the seasoning/oil mixture over the chicken and spread evenly and into all crevices.
  5. Turn chicken over breast side up.
  6. Slip your fingers gently between the breast and the skin to create a pocket and evenly insert the crushed black garlic cloves
  7. Spoon the remaining seasoning/oil mixture over the chicken trying to attain an even coverage.
  8. Roast for approximately 1 hour. Check at 45 minutes (as ovens vary)
  9. Once cooked, remove and cover with loosely with foil and rest for 10 minutes before serving.
