This recipe is for fruity scones that are made with fruit cordial as the main sweetener, rather than traditional sugar. The cordial adds a burst of fruit flavour and natural sweetness to the scones, and pairs perfectly with the mixed dried fruit that is mixed into the dough. These scones are very easy to make and are te perfect addition to any breakfast or brunch.

Ingredients:

  • 2 cups plain flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/3 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1/2 cup fruit tangle cordial
  • 1 cup mixed dried fruit (such as sultanas, raisins)

How To Create:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, and salt.
Using a butter knife or your fingers, cut in/rub in the butter until the mixture resembles fine breadcrumbs and then stir in the dried fruit.
In a separate mixing bowl, whisk together the milk and fruit tangle cordial.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over mix.
On a lightly floured surface, extremely lightly knead the dough and then pat the dough into a 2.5cm thick circle. Using a scone cutter or glass, cut scones and place on the prepared baking sheet.

Bake for 15-20 minutes, or until the scones are golden brown.
Serve the scones warm, with butter. Enjoy!
