How to create...

  1. Preheat oven to 220°C (450°F). Clean scallops and their shells, leaving scallops attached (or have your fish monger do this for you). Arrange scallops on a baking dish, sprinkle with the salt and half the olive oil.
  2. Roast scallops for 4 minutes, being careful not to overcook them. Drizzle with vinegar and remaining olive oil. Garnish with mint and serve immediately.

*make this dish a number of times using different flavoured infused salts
