This wonderfully easy and nutritious meal is bound to be a family favourite, Oh.. and don't forget it's a great addition to any dinner party menu!

 

How to create:

Heat half the oil in a frying pan and saute onion & garlic until soft. Remove from pan and set aside.

Heat half the oil in the frying pan and cook chicken pieces until brown and still juicy ( this may be in two batches so as to not overcrowd the pan)

While the chicken is cooking, bring a large pot of salted water to the boil, add spaghetti and cook until al dente.

Once the chicken is cooked, return onion and garlic to the pan with the chicken. Stir through half the pesto (1/4 jar).

Drain the pasta and in a large (warmed) serving bowl toss the pasta with the remaining pesto, chicken mixture and cherry tomatoes. Garnish with a generous sprinkling of shaved parmesan cheese.
