Unlike the Spanish adobo, the main ingredients of Philippine adobo are ingredients native to Southest Asia, namely soy sauce, black peppercorns & bay leaves. A common ingredient is vinegar giving you a taste sensation!

While this recipe uses chicken it is equally delicious with other proteins such as pork.

How to create

Heat the oil in a large frying pan over medium–high heat and cook the chicken for 6–8 minutes, or until browned on all sides.

Add the garlic and cook for one minute until lightly browned. Season with salt and black pepper. Add the bay leaves and seaweed and soy sauce and simmer for two-three minutes.

Add the apple cider vinegar and bring to the boil. Reduce the heat to low simmer, cover and cook for approximately thirty minutes or until the chicken is tender and the sauce has reduced by half. Serve with freshly chopped shallots and steamed rice or noodles.
