Oyakodon, literally means "parent-and-child donburi", (donburi is a Japanese rice bowl dish). Chicken, egg, and spring onions are all cooked together in a broth and then served on top of a bowl of rice. A simple and delicious meal to enjoy at any time.
Ingredients
2 chicken thigh fillets cut into small bite size pieces
2 spring onions finely sliced
2 large eggs, lightly beaten
300g hot steamed Japanese rice
Additional finely sliced spring onion to serve
Broth
125 ml (½ cup) Dashi Stock
6 tablespoons Tsuyu Seaweed & Soya Sauce
How to Create;
- For the broth, place the Dashi Stock & Tsuyu Sauce in a bowl and stir to combine.
- Heat a heavy based frying pan with lid over medium heat. Add the chicken, onion and broth.
- Slowly bring to the boil, reduce heat to low, cover and simmer for 5 minutes or until the chicken is just cooked.
- Slowly pour the beaten eggs over the top of the chicken and onion, place lid on pan and cook, without stirring for 2 minutes or until the egg is cooked.
- Garnish with spring onion and serve with hot steamed rice.
